Spinach Ricotta Shells

Alfredo sauce, jumbo shells, Italian blend cheese, Ricotta cheese, spinach, egg
dump ricotta and add one egg, stir

Mix in one bag of frozen spinach, use the bag kind not box

spray glass baking dish

put a layer of alfredo sauce on botton, add water or chicken stock to thin and spread

boil shells until almost tender, stuff with ricotta mixture, pour remaining alfredo over stuffed shells, and top with cheese; bake at 450 for 15 minutes or until cheese has melted

we like our cheese brown and bubbly

New Year, New Opportunities

Tonight I am starting the Daniel Fast. If you are not familiar, this fast is representative of Daniel in the bible and his 21 day fast from any foods made from animals. We also have to go three days of complete fasting. Tomorrow is my complete fast day. I will be drinking only water. I am scared but know the Lord will carry me through.
Tonight I chopped my celery into sticks for easy grabbing and bagged up some carrots and salad. I made some homemade roasted red pepper hummus and homemade roasted garlic hummus.
I will use this blog to document my experience. The good bad and ugly!
